My friends and I have been debating this forever. Why didn't Luke use his lightsaber to cut his way out of the Death Star's garbage masher? And who shouts out the trash compactor number in A New Hope?

The answer to the first one is simple, young Padawan. Luke did not have his lightsaber on his person when he infiltrated the Death Star. He left it aboard the Millennium Falcon. You'll note it's never seen dangling from the stormtrooper belt he appropriated.

As for the second part, that would be Han Solo who shouts out "3263827!" in response to Luke's query, "Where are we?"
