Did the final duel (Obi-Wan and Darth Maul) take more time to perfect than the other fighting scenes since this fight seemed to be paced much faster and far more aggressive than the fighting prior to that?

No, by that stage Ewan had become a very good fighter and learned the fight in around three hours.
